Farm fresh local
asparagus is ready for
picking. The earliest
stalks were picked at
the beginning of May
and will continue until
late June.
Local Chef
B e r n a r d
Alberigo uses
fresh local
i n g r e d i e n t s
whenever possible.“During the
winter we have
to rely on
imports and
the asparagus
is pale and skinny,” says
his wife, Manon
Alberigo.“As soon as spring
comes, we can buy
Durham fresh asparagus
and it definitely has a
better flavour. You can
tell the Ontario produce
hasn’t traveled 30,000
kilometeres to get
here.”
The duos favourite
recipe involves boiled
asparagus atop a bed of
greens sprinkled
with fresh
feta cheese. An
interesting fact
which if often
unknown to
most is that
asparagus can
grow more than
nine inches in a
days time.
Sometimes,
the stalks grow so fast
that farmers need to
pick two harvests in one
day.
